  • 500 grams Chicken Thighs
  • 5 tbsp Mustard Oil
  • 4 pcs Onion
  • Whole Garam Masala
  • 2 tbsp Ginger & Garlic Paste
  • 1 Tomato
  • 1 tbsp Cumin Powder
  • 1 tbsp Coriander Powder
  • 1 tbsp Kashmiri Red Chilli Powder
  • tbsp Turmeric Powder
  • Salt
  • ½ tbsp Sugar
  • ½ tbsp Garam Masala Powder
  • ½ tbsp Ghee or Clarified Butter
  • ½ cup Water

Ingredients needed to Cook Chicken Kosha

  • Chicken Thighs (500 gm) 
  • Mustard Oil  (5tbsp) or (as per your need and taste)
  • Onion (4 medium sizes) /sliced/Grated/Paste.
  • Whole Garam Masala (Tej Patta and Red Dry Chilli – You can add cloves, cardamom, and cinnamon stick)
  • Ginger & Garlic Paste (2tsp)
  • Tomato Sliced/Puree (1 medium size)
  • Cumin Powder (1 tsp)
  • Coriander Powder (1tsp)
  • Kashmiri Red Chilli Powder (1 tbsp)
  • Turmeric Powder (1 ½ tbsp)
  • Salt (to taste)
  • Sugar (½ tbsp)
  • Garam Masala Powder (½ tbsp)
  • Ghee or Clarified Butter (½ tbsp)
  • Water (½ cup)

Process of Making The Kosha Chicken Recipe

  • Clean and wash the chicken pieces with fresh tap water.
  • Add salt and water to the chicken and rest it for 30mins-1hour (it cleans the chicken leaving zero smell).
  • Marinate the chicken with all powdered spices for a minimum 30mins -1 hour (You can leave it overnight as well).
    1. Cumin Powder (1 tsp)
    2. Coriander Powder (1tsp)
    3. Kashmiri Red Chilli Powder (1 tbsp)
    4. Turmeric Powder (1 1/2 tsp)
    5. Salt (to taste)
  • Heat oil in a pan. Add whole garam masala ( tej patta and dry red chilli or shukno lonka as foron).
  • Now add all the sliced/grated onion into the pan and fry them until become caramelized.
  • Then add ginger and garlic paste. Fry them until the raw smell of garlic has gone.
  • Add chopped tomatoes or tomato puree and cook them till become soft and tender.
  •  Add 1 tbsp of water so that the dry spices do not get burnt. Braise(koshano) all the masala until the gravy starts leaving oil from the sides.
  • Now add the marinated chicken pieces into the pan and mix well with the gravy.
  • Cook for 5 minutes on medium to a low flame by stirring it constantly.
  • Then add 1/2 cup of water, mix it well and cover the pan with a heavy lid. Cook for 10-15 minutes or until the chicken pieces become soft and tender. Cook on low flame.
  • After that, open the lid and stir the curry well. If you feel the curry becomes dry, then add some more splash of warm water.
  • Cook for another 5 minutes on medium heat.
  • Lastly, when our curry is ready and the chicken becomes soft, add sugar, garam masala powder, and ghee(or butter). The consistency of the gravy should be thick and not too much runny. 
  • Mix everything well and switch off the flame.
